Set your oven to 425°F (or 220°C). Stick a baking sheet inside while it heats up—this’ll help make those fries nice and crispy!

If you want to peel the sweet potatoes, go for it. Then cut them up into fries about ¼-inch thick. Try to keep them about the same size so they cook the same way.

Put your sliced fries in a bowl of cold water and let them chill there for about 30 minutes. This removes some of the starch, which makes them crispier later on.

Drain the water from the fries and use paper towels to dry them off. Add them to a bowl, then mix them up with olive oil, garlic powder, paprika, salt, and pepper. If you wanna use cornstarch, now’s the time to toss that in as well. Stir things around until evenly coated.

Carefully pull the hot baking sheet out of the oven and spread the fries on it in one layer. Be sure not to crowd them so they’ll cook evenly and get crisp! Bake for about 25–30 minutes, flipping halfway through, until they look golden and delicious.

Once you pull the fries out and see that lovely golden color, let them rest for a couple of minutes before digging in.
