Egg Oats Berry Topping (Print Version)

# Ingredients:

→ Creamy Oatmeal Base

01 - ½ cup jumbo rolled oats
02 - 1 cup water
03 - ¼ tsp salt
04 - 2 tbsp chilled milk
05 - 1-2 big eggs, beaten

→ Berry Topping

06 - 1 cup mixed frozen berries
07 - ¼ tsp vanilla flavor
08 - 1 tbsp maple syrup or honey

# Instructions:

01 - Toss frozen berries into a small pot with syrup and vanilla over gentle heat. Cook until they turn soft and jam-like. Smash them with a fork or masher to speed things up.
02 - Put jumbo oats, water, and salt in another pot. Let it bubble on high heat, then turn down to medium-low. Cook for 5–8 minutes, stirring now and then to break down oats until they're thick and the water's gone.
03 - Beat your egg(s) in a bowl until they're all mixed up.
04 - Take oats off the heat. Mix in the cold milk and keep stirring for a minute until it soaks in. This helps cool everything down a bit.
05 - Pour the beaten egg(s) into the oats in a thin stream while stirring non-stop. Put back on low heat and cook for about a minute until it gets a bit thicker but stays smooth.
06 - Scoop the creamy oats into bowls and spoon the berry mix on top. Add whatever extra toppings you want.

# Notes:

01 - Newbies should stick with one egg at first, then try two when you're comfortable with the method for extra protein punch.
02 - Getting these oats just right means finding that sweet spot where they're creamy but the eggs don't scramble.
