Simple Creamy Cajun Chicken Pasta (Print Version)

# Ingredients:

→ Main

01 - 12 ounces penne pasta
02 - 1 pound chicken breast, chopped into little cubes (about 1 inch)

→ Sauce

03 - 1 can (14.5 oz) of fire-roasted diced tomatoes
04 - 1 cup of rich heavy cream

→ Seasonings

05 - 1 tablespoon of freshly chopped parsley
06 - 1/2 teaspoon of black pepper
07 - 1/2 teaspoon of regular salt
08 - 2 tablespoons of olive oil
09 - 1 teaspoon Cajun spice mix

# Instructions:

01 - Drizzle olive oil into a big skillet and heat it over medium-high. Sprinkle some salt and pepper on the chicken cubes, then cook them for about 10-12 minutes until the edges are golden.
02 - Add in the fire-roasted tomatoes and Cajun spices. Stir it up and let it cook without covering for about 3-5 minutes, letting the flavors blend.
03 - Pour the cream over the mix and let it heat for a minute or so. Stir in the pasta that’s already cooked and sprinkle fresh parsley on top before serving.
