Scallion Sesame Crackers (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1/4 cup sesame seeds, toasted
02 - 1 1/3 cup plain flour
03 - 1/8 teaspoon soda for baking
04 - 1/2 teaspoon salt
05 - 1/2 teaspoon yeast (dry, active)

→ Fresh Ingredients

06 - 1 cup scallions, chopped super fine

→ Wet Ingredients

07 - 1/2 cup milk, room temp
08 - 2 tablespoons butter, melted

# Instructions:

01 - Toss the flour, sesame seeds, yeast, salt, and scallions into a bowl and mix them up. Pour in the melted butter and milk. Stir it all together until it forms a dough. Knead for about two minutes to get a smooth texture. Let it sit for 15 minutes to relax.
02 - Fire up your oven to 375°F (190°C). Split the dough in two and grab a big parchment sheet. Rub some oil on your rolling pin so the dough won't stick.
03 - Roll the dough on parchment paper until it's super thin, about the thickness of a coin (around 2 mm). The thinner it is, the crunchier they'll bake. Use a small glass or cutter to make your cracker shapes.
04 - Set the cracker shapes on a baking tray. Use a fork to poke holes in the crackers to stop them from puffing up while they cook.
05 - Bake the crackers for 12-15 minutes, watching for a golden brown color. Let them cool fully before eating or storing.
