01 - 8 ounces ground beef
02 - Salt, to taste
03 - Black pepper, to taste
04 - Pinch of crushed red pepper flakes (optional)
05 - 3/4 cup pale ale beer
06 - 1/2 cup shredded pepper Jack cheese
07 - 16 ounces processed cheese product, cubed (such as Velveeta)
08 - 1 can (14.5 ounces) diced tomatoes with green chilies (such as Rotel), partially drained
09 - 1 cup black beans, drained and rinsed
10 - 1/4 cup finely diced red onion
11 - 1/4 cup chopped fresh cilantro

# Directions:

01 - Cook and crumble the ground beef over medium-high heat in a large, high-sided skillet until fully browned. Drain excess grease.
02 - Add crushed red pepper flakes, salt, and black pepper to the beef. Pour in the pale ale and let it simmer for 4 to 5 minutes, allowing the beer to reduce.
03 - Lower heat to medium-low. Add shredded pepper Jack cheese and cubed processed cheese product. Stir regularly until fully melted and creamy.
04 - Stir in the black beans, red onion, and cilantro, mixing until evenly incorporated.
05 - Add the canned tomatoes with some of their juice for a thinner dip if desired. Stir thoroughly and continue to heat for about 5 minutes until heated through.
06 - Transfer to a serving bowl and serve hot with preferred dippers.
