Savory Cottage Cheese Egg Bites (Print Version)

# Ingredients:

→ Base Ingredients

01 - 8 large eggs
02 - 1 cup low-fat or fat-free cottage cheese (recommended levels: 0% to 2%)
03 - ½ cup shredded cheese of your choice

→ Seasonings

04 - ¼ teaspoon onion powder
05 - ¼ teaspoon garlic powder
06 - ¼ teaspoon black pepper
07 - ¼ teaspoon salt

→ Optional Add-Ins (limit to 1 cup total)

08 - Fresh spinach, finely chopped
09 - Diced ham
10 - Cooked sausage pieces
11 - Small broccoli florets
12 - Red or green bell peppers, diced

# Instructions:

01 - Set your oven to 350°F to preheat. Lightly coat a silicone muffin tray with a bit of oil or non-stick spray so the egg bites don’t stick.
02 - Put the eggs, cottage cheese, and all the spices into a blender with high power. Blend until everything’s creamy and smooth.
03 - Divide the egg blend into the muffin tray, using about ¼ cup for each section.
04 - Sprinkle shredded cheese on top of the egg mix, along with any extra mix-ins you like. Use the back of a spoon to slightly mix them in. If you want, you can add more cheese on top.
05 - Place in the oven and bake for 18-22 minutes, or until the egg bites are set and firm. Once done, let them cool down a bit before you take them out of the tray.

# Notes:

01 - If you’d prefer to make an egg white version, swap out the whole eggs for 1.5 cups of egg whites (this is roughly 12 egg whites). Just keep in mind that this version will stay a little wetter and won’t be as fluffy as the one made with whole eggs.
