Cozy Cottage Cheese Chicken Salad (Print Version)

# Ingredients:

→ Protein & Dairy

01 - 1.25 lb cooked chicken breast, either shredded or diced
02 - 1 cup of cottage cheese

→ Fresh Produce

03 - 2 tablespoons of fresh dill, minced
04 - 3 tablespoons of finely sliced green onions
05 - 1 stalk of celery, diced into small pieces

→ Dressing & Seasonings

06 - 2 tablespoons of fresh lemon juice
07 - 1 tablespoon of Dijon mustard
08 - 1/2 teaspoon of maple syrup
09 - 1/8 teaspoon salt, with extra for flavor if needed
10 - 1/4 teaspoon of black pepper, and more if preferred
11 - 1/2 teaspoon of garlic powder

# Instructions:

01 - Take your cottage cheese and use a blender or an immersion blender to make it silky. Want an easy trick? Use the immersion blender straight in the container! If you like the curdy texture, you don't have to blend it at all—or just partially.
02 - In a medium-sized bowl, stir together the blended cottage cheese, minced dill, sliced scallions, diced celery, lemon juice, Dijon mustard, maple syrup, and all the spices. Mix it until everything comes together smoothly.
03 - Toss the shredded chicken into the bowl with the dressing. Mix it all up until the chicken is coated well. Taste it, and if it needs any extra salt or pepper, add it in!

01 - Save any leftover smooth cottage cheese to use as a base for ranch dressing.
02 - This recipe makes around 5-6 cups of chicken salad goodness.
