Coconut Bars with Lime (Print Version)

# Ingredients:

→ Base

01 - ½ cup butter, left at room temp
02 - ⅔ cup brown sugar
03 - 1 egg, brought to room temp
04 - 1 teaspoon vanilla extract
05 - ¼ teaspoon coconut extract
06 - 1¼ cups all-purpose flour
07 - ½ teaspoon baking powder
08 - ¼ teaspoon salt
09 - ½ cup unsweetened coconut flakes
10 - ⅓ cup tiny white chocolate chips

→ Lime Frosting

11 - ½ cup butter, not cold
12 - ½ teaspoon lime extract
13 - 1½ cups powdered sugar
14 - 1 tablespoon heavy cream or milk
15 - 2 tablespoons lime juice
16 - Lime green food coloring

→ Garnish

17 - 2 tablespoons melted white chocolate
18 - 2 tablespoons coconut flakes

# Instructions:

01 - Heat your oven to 175°C (350°F). Put parchment paper in a 20x20cm (8x8-inch) baking pan with extra hanging over the sides for easy lifting later.
02 - Whip the butter and brown sugar till they're fluffy and pale. Add the egg, vanilla, and coconut flavors, then mix till everything's smooth.
03 - Stir in the flour, baking powder, salt, and coconut flakes just enough to mix them. Then toss in those white chocolate chips gently.
04 - Push the mixture flat in your lined pan. Pop it in the oven for about 15-16 minutes until the edges turn golden and the middle doesn't jiggle. Let it cool all the way on a wire rack.
05 - Beat the soft butter in a big bowl until it's smooth. Slowly mix in the powdered sugar, then add lime extract, milk, and lime juice until it's light and airy. Drop in some green coloring to match that famous coffee shop shade.
06 - Smear the lime frosting all over the cooled base. Dribble melted white chocolate on top using a bag with the corner snipped or just a spoon. Scatter the extra coconut flakes on top.
07 - Slice into squares and eat them fresh or chilled. They taste great with coffee or a glass of milk for the full coffee shop feel.

# Notes:

01 - If you can't find lime green coloring, just mix some yellow and green drops together for that signature look.
02 - You can keep these treats in a sealed container in your fridge for about 5 days.
