Squish one banana into a smooth paste and keep the other one for decorating later.

Put the squished banana in a bowl with the coconut yoghurt, vanilla, maple syrup, chia seeds, and coconut milk. Stir till smooth. Wait 5 minutes, then stir once more.

Put a lid on your mixture and leave it in the fridge all night.

Scoop the pudding into 2 glasses. Add slices from your saved banana, a dollop of coconut yoghurt, and sprinkle with coconut chips. If you want, you can make it fancy with 3 different layers by adding extra yoghurt between pudding layers.
