Classic Cucumber Feta Salad (Print View)

Cucumbers, feta, herbs, and lemon make a crisp, vibrant side ideal for gatherings or everyday meals.

# What You'll Need:

→ Vegetables

01 - 3 medium English cucumbers, thinly sliced or chopped
02 - 1/4 cup thinly sliced red onion (optional)

→ Cheese

03 - 1 cup crumbled feta cheese

→ Herbs

04 - 2 tablespoons chopped fresh dill or mint

→ Dressing

05 - 3 tablespoons extra virgin olive oil
06 - 2 tablespoons freshly squeezed lemon juice
07 - 1 small garlic clove, minced
08 - Salt and freshly ground black pepper, to taste
09 - Pinch of crushed red pepper flakes (optional)
10 - Drizzle of honey (optional)

# Directions:

01 - Wash and dry cucumbers thoroughly. Slice each cucumber into thin rounds, approximately 1/8 inch thick, or chop into bite-sized pieces as preferred.
02 - Peel and thinly slice the red onion. If desired, soak slices in cold water for 5 minutes to reduce sharpness, then drain well.
03 - In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and, if using, crushed red pepper flakes and honey. Taste and adjust seasoning as necessary.
04 - In a large mixing bowl, toss sliced cucumbers, red onion, and chopped dill or mint together.
05 - Pour the prepared dressing over cucumber mixture and gently toss to coat vegetables evenly.
06 - Top with crumbled feta cheese and gently mix, taking care not to break up the cheese excessively.
07 - Cover bowl and refrigerate for at least 15 minutes to allow flavors to develop.
08 - Just before serving, gently toss salad again and adjust seasoning with salt or pepper if needed.

# Notes:

01 - For best flavor, allow salad to chill longer. Substitute mint for dill if a brighter note is desired.
