Wash and dry cucumbers thoroughly. Slice each cucumber into thin rounds, approximately 1/8 inch thick, or chop into bite-sized pieces as preferred.

Peel and thinly slice the red onion. If desired, soak slices in cold water for 5 minutes to reduce sharpness, then drain well.

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and, if using, crushed red pepper flakes and honey. Taste and adjust seasoning as necessary.

In a large mixing bowl, toss sliced cucumbers, red onion, and chopped dill or mint together.

Pour the prepared dressing over cucumber mixture and gently toss to coat vegetables evenly.

Top with crumbled feta cheese and gently mix, taking care not to break up the cheese excessively.

Cover bowl and refrigerate for at least 15 minutes to allow flavors to develop.

Just before serving, gently toss salad again and adjust seasoning with salt or pepper if needed.
