Turn oven to 350°F (175°C). Put parchment on two cookie sheets.

Stir flour, baking powder, and salt in a bowl. Put it aside.

Beat soft butter with white sugar until puffy, for about 2-3 minutes. Mix in the egg, vanilla, and lemon zest until they're all blended together.

Slowly add dry stuff to butter mix, stirring just enough to mix. Don't stir too much.

Sprinkle some flour and roll the dough flat to 1/4 inch. Cut round shapes and put them on your ready cookie sheets.

Pop in oven for 8-10 minutes until edges look slightly golden. Take out and let them cool all the way on a wire rack.

In a big bowl, whip the soft butter until smooth.

Add icing sugar bit by bit, mixing well each time.

Stir in the ground lavender, cream, and vanilla. If you want purple color, add some food dye now.

Keep beating until the mix gets light and fluffy, about 2-3 minutes more.

When cookies are totally cool, spread lots of lavender cream on the flat side of half your cookies.

Put another cookie on top and push down gently to make a sandwich.

Add a small swirl of lavender cream on top of each sandwich cookie for extra yumminess and fancy look.

Top each cookie with a thin lemon slice and fresh lavender stem to make them look fancy.
