Chocolate Rice Cake Balls (Print Version)

# Ingredients:

01 - 12 puffed rice discs
02 - 1 soft banana
03 - 5 pitted Medjool dates
04 - 80 ml (⅓ cup) seed spread (like peanut spread)
05 - 70 g melted dark chocolate (non-dairy option available)

# Instructions:

01 - Throw rice discs, banana, dates and seed spread into a food processor. Give it quick pulses until everything turns crumbly but sticks when pressed.
02 - Grab tablespoons of the mix and roll between your palms to create small round balls.
03 - Pop the balls in your freezer for about 15 minutes so the chocolate layer will harden quicker.
04 - Take them out and dunk each ball into the melted chocolate. Add any toppings you fancy.
05 - Let the chocolate fully harden. Eat right away or keep in your fridge for up to a week.
