Chocolate Peanut Bars (Print Version)

# Ingredients:

→ Main Mix

01 - ½ cup (40g) plain or vanilla protein powder you like best
02 - ⅓ cup (40g) finely ground flaxseed meal
03 - 1 teaspoon vanilla extract
04 - 1 tablespoon coconut oil, melted and warm
05 - ¼ cup (84g) honey, or swap with coconut palm syrup if you'd rather keep it vegan
06 - ¾ cup (192g) smooth peanut butter made only with peanuts and salt

→ Top Layer

07 - Coarse sea salt for sprinkling on top, optional but tasty
08 - 2.5 ounces of an 85% dark chocolate bar you love

# Instructions:

01 - In a mixing bowl, blend together the peanut butter, honey, vanilla, and melted coconut oil until you're left with a smooth mix. Add the protein powder and flaxseed, stirring at first, then use your hands to knead it like dough until it holds together.
02 - Take an 8x4 inch pan lined with parchment paper and press the dough into it firmly, making sure it’s spread out evenly.
03 - Melt the chocolate in a handy saucepan over low heat. Once smooth, pour it over the pressed layer, tilting the pan to let it spread out evenly across the top.
04 - Pop the pan in the fridge for 30 minutes to an hour until it's firm. Slice into 10 even pieces, either bars or small squares, and store them in the fridge in a covered container for up to two weeks.

# Notes:

01 - If the dough feels too crumbly, try adding ½ to 1 tablespoon more melted coconut oil to fix it.
02 - For protein powder, both Vital Proteins collagen (dairy-free) and Aloha vanilla plant protein powders work great for taste and texture.
03 - These bars are packed with protein and have a peanut-butter-cup-like flavor!
