In a mixing bowl, blend together the peanut butter, honey, vanilla, and melted coconut oil until you're left with a smooth mix. Add the protein powder and flaxseed, stirring at first, then use your hands to knead it like dough until it holds together.

Take an 8x4 inch pan lined with parchment paper and press the dough into it firmly, making sure it’s spread out evenly.

Melt the chocolate in a handy saucepan over low heat. Once smooth, pour it over the pressed layer, tilting the pan to let it spread out evenly across the top.

Pop the pan in the fridge for 30 minutes to an hour until it's firm. Slice into 10 even pieces, either bars or small squares, and store them in the fridge in a covered container for up to two weeks.
