# What You'll Need:

→ Greek Yogurt Sauce

01 - 1 cup Greek yogurt
02 - 2 teaspoons grated lemon zest
03 - 2 tablespoons fresh lemon juice
04 - 2 cloves garlic, minced
05 - 1 tablespoon olive oil
06 - 1/2 teaspoon salt

→ Chicken Patties

07 - 1 pound ground chicken
08 - 1 medium zucchini, coarsely chopped
09 - 1 ear corn, kernels removed
10 - 1/2 medium red bell pepper, finely diced
11 - 3 green onions, thinly sliced
12 - 1 large egg, lightly beaten
13 - 1/2 cup panko bread crumbs
14 - 2 tablespoons fresh cilantro, chopped
15 - 3 cloves garlic, minced
16 - 1 teaspoon ground cumin
17 - 1 teaspoon ground coriander
18 - 1 teaspoon salt
19 - 1/2 teaspoon freshly ground black pepper
20 - 3 tablespoons olive oil, for searing

21 - 1 pint cherry or grape tomatoes, quartered
22 - 1/3 medium seedless English cucumber, finely diced
23 - 2 green onions, thinly sliced
24 - 1/4 cup fresh cilantro, finely chopped
25 - 1 clove garlic, minced
26 - zest of 1 lemon
27 - 2 tablespoons fresh lemon juice
28 - pinch salt

# Directions:

01 - In a small bowl, combine Greek yogurt, grated lemon zest, lemon juice, minced garlic, olive oil, and salt. Mix well and refrigerate until serving.
02 - Preheat oven to 425°F (220°C).
03 - In a large bowl, place ground chicken, coarsely chopped zucchini, corn kernels, red bell pepper, green onions, beaten egg, panko, cilantro, minced garlic, ground cumin, ground coriander, salt, and black pepper. Mix thoroughly by hand until just combined.
04 - Shape chicken mixture into evenly sized burger patties.
05 - Heat olive oil in a large frying pan over medium heat. Sear the patties for about 2 minutes on each side until golden brown.
06 - Transfer seared patties to a baking sheet. Place in the preheated oven and bake for 7 to 10 minutes or until cooked through.
07 - In a medium bowl, combine quartered tomatoes, diced cucumber, green onions, chopped cilantro, minced garlic, lemon zest, lemon juice, and a pinch of salt. Stir gently to blend.
08 - Serve burgers hot, topped with Greek yogurt sauce and tomato-cucumber relish. Accompany with pita, tortillas with hummus, rice, mashed potatoes, or pasta as desired.
