Chicken Avocado Melt (Print Version)

# Ingredients:

→ Main Components

01 - 2 chicken breasts, no skin or bones
02 - 1 avocado, cut into slices
03 - 4 pieces of your favorite cheese (cheddar, provolone, or Swiss)
04 - 4 slices of bread, try ciabatta or sourdough

→ Seasonings & Spreads

05 - Freshly cracked black pepper and a pinch of salt
06 - 2 large spoonfuls of mayo
07 - 1 spoon of Dijon mustard

→ Fresh Toppings

08 - 1 juicy tomato, sliced nicely
09 - A small red onion, cut into thin rings

→ For Cooking

10 - Olive oil for cooking the chicken (about 1 spoon)
11 - Butter or olive oil to grill the sandwiches

# Instructions:

01 - Sprinkle salt and pepper on both sides of the chicken, being generous. Heat up some olive oil in a skillet over medium-high heat until it looks shiny. Lay the chicken in and let it cook about 6-7 minutes on each side till it's fully cooked through and has a nice golden look. Set it aside and slice it thinly when it's cooled a little.
02 - While you’re letting the chicken rest, slice the avocado into neat pieces. Get the cheese ready too, and slice up the onion and tomato nice and thin.
03 - Get your slices of bread and spread them with mayo and Dijon mustard. This will help add delicious flavor and ensure a crispy texture when grilled.
04 - Take two pieces of bread, and layer on the sliced chicken, avocado, and cheese. Add your onion slices and tomato, then top it off with the other piece of bread, making sure the spread side faces the filling.
05 - Heat up a skillet or grill pan over medium. Add butter or olive oil to the pan and gently toast the sandwiches until golden brown and gooey with melted cheese, about 3-4 minutes per side. Push lightly with a spatula to help melt the cheese evenly.

# Notes:

01 - Room temperature cheese makes all the difference if you want it to melt smoothly.
02 - Leftovers should be put in an airtight container. To reheat, try a toaster oven rather than a microwave to keep it crispy.
