Cheesy Taco Pasta (Print View)

Rotini, taco-seasoned beef, salsa, and cheese combine for a hearty, cheesy pasta with bold flavors.

# What You'll Need:

→ Pasta and Protein

01 - 8 ounces rotini pasta
02 - 1 pound ground beef

→ Sauce and Seasoning

03 - 1/2 cup water
04 - 1 ounce taco seasoning
05 - 1 1/2 cups salsa

→ Cheese

06 - 2 cups shredded Mexican cheese blend, divided

# Directions:

01 - Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package instructions until al dente. Drain and set aside.
02 - In a large pot over medium-high heat, cook and crumble ground beef until no longer pink. Drain excess fat if necessary.
03 - Add taco seasoning and water to the cooked ground beef. Stir thoroughly and cook until the liquid is absorbed and flavors blend, about 2-3 minutes.
04 - Return drained rotini and salsa to the pot with seasoned beef. Stir to combine ingredients evenly.
05 - Add 1 1/2 cups shredded Mexican cheese to the pasta mixture. Stir until melted and creamy. Remove from heat, sprinkle remaining 1/2 cup cheese on top, and allow it to melt before serving.

# Notes:

01 - For extra texture, top with sliced green onions or fresh cilantro before serving.
