01 - 1 pound ground beef
02 - 1/2 cup dry breadcrumbs
03 - 1/4 cup whole milk

05 - 1 small yellow onion, finely chopped
06 - 2 cloves garlic, minced
07 - 1 teaspoon kosher salt
08 - 1/2 teaspoon freshly ground black pepper
09 - 1 teaspoon Worcestershire sauce
10 - 1/2 cup ketchup, divided
11 - 1 tablespoon prepared yellow mustard

12 - 3 to 4 ounces cheddar or mozzarella cheese, cut into small cubes
13 - Fresh parsley, chopped (optional, for garnish)

# Directions:

01 - Preheat oven to 375°F and lightly grease a mini muffin tin to prevent sticking.
02 - In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, 1/4 cup of the ketchup, and mustard. Mix until homogeneous using clean hands or a sturdy spoon.
03 - Portion approximately 1 ounce of the meat mixture, flatten in your palm, place a cheese cube in the center, then enclose the cheese and roll into a ball. Arrange each ball in the prepared muffin tin cup.
04 - Stir together the remaining 1/4 cup ketchup with a small squeeze of mustard. Spoon a thin layer of sauce on top of each meatloaf bite.
