01 - 2 cups mashed potatoes
02 - 1 cup shredded cheddar cheese
03 - 1/4 cup grated Parmesan cheese
04 - 1 large egg
05 - 1/4 cup all-purpose flour
06 - 2 green onions, finely chopped
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon salt
09 - 1/4 teaspoon ground black pepper

10 - 1/2 cup breadcrumbs or panko

# Directions:

01 - Preheat oven to 400°F and grease a standard muffin tin or baking sheet with cooking spray or a thin layer of oil.
02 - Mix mashed potatoes, cheddar cheese, Parmesan cheese, egg, flour, green onions, garlic powder, salt, and black pepper in a large bowl until the mixture is thoroughly combined.
03 - Using a tablespoon, portion and shape the mixture into compact, even balls.
04 - Roll each potato ball in breadcrumbs or panko to ensure all sides are evenly coated.
05 - Set the coated balls into the greased muffin tin cavities or evenly spaced on the prepared baking sheet.
06 - Lightly spray or brush the tops of the potato balls with cooking spray or oil to promote browning.
07 - Place the pan in the oven and bake for 20 to 25 minutes until golden and crispy on the exterior.
08 - Allow to cool briefly before removing from pan. Serve warm, optionally with a preferred dipping sauce.
