Simple Cheesy Cauliflower Steaks (Print Version)

# Ingredients:

01 - 2 fresh, medium-sized cauliflower heads that feel nice and solid
02 - 1 tbsp of any plain vegetable oil
03 - 1 tsp fine sea salt
04 - 1/2 tsp black pepper, freshly ground
05 - 2 tsp onion powder

→ Cheesy Topping

06 - 1/2 cup grated finely, Gruyere cheese or some sharp cheddar
07 - 1/2 cup Parmesan, grated to a fine consistency

→ Decorations

08 - Chopped-up fresh chives for garnishing

# Instructions:

01 - Set your oven to preheat at 400°F (200°C, or 180°C if using a fan). Lay some parchment paper onto a large baking tray.
02 - Slice up 6 pieces from the cauliflowers—about 3/4-inch thick each. Don’t panic if some slices break up; patch them on the tray.
03 - Scatter your grated Parmesan over the parchment, then snugly lay your cauliflower slices on the tray in one layer.
04 - Make a mix by stirring together the onion powder, sea salt, ground pepper, and oil. Use a brush to spread this tasty mix over the cauliflower steaks.
05 - Put the tray into your oven and bake for 20 minutes, or until it’s easy to poke through the cauliflower with a fork.
06 - Sprinkle Gruyere (or cheddar) over the steaks, and bake again for 10-15 minutes. Pull them out when the cheese browns and bubbles.
07 - Top with chopped chives and serve warm while the cheese is gooey.

# Notes:

01 - Keep the leftover bits from slicing cauliflower—they’re awesome in soup or as a side dish, and you can freeze them too!
02 - Start with tight and firm heads of cauliflower if you want slices that don’t fall apart as much.
03 - Having two cauliflowers means you’ll get more uniform-looking steaks that stay in one piece.
