Set your oven to preheat at 400°F (200°C, or 180°C if using a fan). Lay some parchment paper onto a large baking tray.

Slice up 6 pieces from the cauliflowers—about 3/4-inch thick each. Don’t panic if some slices break up; patch them on the tray.

Scatter your grated Parmesan over the parchment, then snugly lay your cauliflower slices on the tray in one layer.

Make a mix by stirring together the onion powder, sea salt, ground pepper, and oil. Use a brush to spread this tasty mix over the cauliflower steaks.

Put the tray into your oven and bake for 20 minutes, or until it’s easy to poke through the cauliflower with a fork.

Sprinkle Gruyere (or cheddar) over the steaks, and bake again for 10-15 minutes. Pull them out when the cheese browns and bubbles.

Top with chopped chives and serve warm while the cheese is gooey.
