Cheesy Baked Vegetable Rolls (Print View)

# What You'll Need:

→ Vegetable Filling

01 - 1 cup (about 110 g) shredded carrots
02 - 1 cup (30 g) spinach, finely chopped
03 - 1 cup (150 g) assorted bell peppers, diced
04 - 1 cup (120 g) zucchini, grated
05 - 1 cup (70 g) mushrooms, finely chopped
06 - 1 small onion, diced
07 - 2 cloves garlic, minced
08 - 1 teaspoon olive oil
09 - 1 teaspoon salt
10 - 0.5 teaspoon black pepper
11 - 1 teaspoon Italian seasoning
12 - 0.5 teaspoon red pepper flakes (optional)

→ Cheese Mixture

13 - 1 cup (100 g) mozzarella cheese, shredded
14 - 1 cup (100 g) cheddar cheese, shredded
15 - 0.5 cup (125 g) ricotta cheese
16 - 0.25 cup (20 g) Parmesan cheese, grated
17 - 1 egg
18 - 1 teaspoon garlic powder
19 - 0.5 teaspoon onion powder

→ Dough

20 - 10 sheets phyllo dough or puff pastry
21 - 2 tablespoons (28 g) butter, melted

# Directions:

01 - Heat olive oil in a large pan over medium heat. Add diced onion and minced garlic, sautéing until fragrant. Stir in mushrooms and bell peppers, cooking for 2 to 3 minutes until slightly softened.
02 - Add shredded carrots, grated zucchini, and chopped spinach to the pan. Season with salt, black pepper, Italian seasoning, and red pepper flakes if desired. Continue to cook for 5 minutes, stirring occasionally, until vegetables are tender. Remove from heat and set aside to cool.
03 - In a mixing bowl, combine shredded mozzarella, cheddar, ricotta, and grated Parmesan cheese. Add egg, garlic powder, and onion powder, mixing thoroughly until the mixture is smooth and cohesive.
04 - Fold the cooled vegetable mixture into the cheese blend until evenly distributed.
05 - Preheat oven to 190°C. Lay phyllo or puff pastry sheets on a clean surface.
06 - Spoon 2 to 3 tablespoons of the prepared filling onto one end of each dough sheet. Roll up tightly, tucking in the edges to seal. Arrange rolls seam-side down on a parchment-lined baking tray.
07 - Lightly brush each roll with melted butter to promote even browning.
08 - Bake in the preheated oven for 20 to 25 minutes, or until golden brown and crisp. Remove from oven, allow to cool slightly, and serve warm accompanied by a preferred dipping sauce.
