Take off bean strings by breaking the tips and pulling down with your fingers, or swipe a peeler down each edge. Chop them shorter to fit your pan easily. Toss in a bowl with a bit of oil and some salt and pepper.

Crank up the heat under your griddle until it's super hot. Add beans carefully, making sure not to stuff too many in at once. Work in batches if you need to.

Flip them now and then until you see dark grill marks forming on both sides.

For your sauce, slice the lemon in half and place it cut-side down on the hot griddle. Let it sit there until the surface turns black and caramelized.

Mix the sesame paste, natural sweetener and smashed garlic in a small bowl. Add water bit by bit while stirring until it gets runny. Squeeze in juice from the charred lemon and add salt to taste.

Mix your beans with the sauce until they're fully coated and put them on plates right away. If you want, top with some preserved lemon bits or throw on some raisins and pine nuts.
