Carrot Cake Smoothie Blend (Print View)

# What You'll Need:

01 - 1 large raw carrot, sliced or shredded
02 - 1 frozen medium ripe banana
03 - 120 grams frozen pineapple chunks
04 - 180 millilitres light coconut milk, plus extra as required
05 - 60 grams plain Greek yogurt
06 - 25 grams gluten-free oats
07 - 15 millilitres pecan butter or almond butter
08 - 5 millilitres vanilla extract
09 - 2.5 millilitres ground cinnamon
10 - Pinch of nutmeg

# Directions:

01 - Peel and slice the carrot. If necessary, shred for easier blending, especially when using a standard blender.
02 - Place the sliced carrot, frozen banana, frozen pineapple, light coconut milk, Greek yogurt, gluten-free oats, pecan or almond butter, vanilla extract, ground cinnamon, and a pinch of nutmeg into a high-powered blender.
03 - Blend on high speed for 1–2 minutes until completely smooth and thick. If the mixture is too thick, add extra coconut milk a little at a time until desired consistency is achieved.
04 - Pour into a chilled glass and serve immediately for optimal texture and freshness.
