Peel and slice the carrot. If necessary, shred for easier blending, especially when using a standard blender.

Place the sliced carrot, frozen banana, frozen pineapple, light coconut milk, Greek yogurt, gluten-free oats, pecan or almond butter, vanilla extract, ground cinnamon, and a pinch of nutmeg into a high-powered blender.

Blend on high speed for 1–2 minutes until completely smooth and thick. If the mixture is too thick, add extra coconut milk a little at a time until desired consistency is achieved.

Pour into a chilled glass and serve immediately for optimal texture and freshness.
