Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone liner.

Melt butter in a small skillet over low-medium heat. Add diced apples, granulated sugar, and cinnamon. Cook, stirring occasionally, until apples turn just translucent, about 15 minutes. Allow mixture to cool for at least 10 minutes.

Unroll crescent dough onto a cutting board, maintaining a rectangular shape. Press seams together to seal. Evenly spread apple filling over the dough surface.

Tightly roll the dough from the longer side to form a log. Slice into 8 equal pieces using a serrated knife. Arrange pieces on the prepared baking sheet, spacing as desired.

Bake rolls for 15 to 25 minutes, or until golden brown on top and cooked through.

While rolls bake, melt butter and brown sugar in a small saucepan over medium heat, stirring constantly for 2 minutes. Remove from heat, whisk in powdered sugar, then add vanilla and 2 tablespoons heavy cream. If needed, add additional cream to achieve desired consistency.
