Tasty Grilled Cheese Delight (Print Version)

# Ingredients:

→ For the Spread

01 - 2 teaspoons of chopped sun-dried tomatoes preserved in oil
02 - 1 tablespoon of finely chopped pecans or walnuts
03 - 2 tablespoons of soft garlic and herb cheese (e.g., Boursin), softened

→ For the Sandwich

04 - 10 baby spinach leaves, washed
05 - 2 hearty slices of sourdough or rustic bread
06 - 1/3 cup of shredded mozzarella cheese or a few slices of fresh mozzarella
07 - 8-10 kalamata olives, halved after removing pits
08 - 2 teaspoons of butter

# Instructions:

01 - Take the soft herb and garlic cheese, the sun-dried tomatoes, and chopped nuts, then stir them up in a bowl until you’ve got a smooth and creamy mix.
02 - Butter one side of each bread piece and set them in the pan with the buttered side down. Let them toast up until they turn golden and crisp, then remove them.
03 - On the unbuttered sides of both slices, spread your garlic and herb mix. Add spinach, olives, and cheese on one of the slices, then complete the sandwich with the other slice.
04 - Place the sandwich back in the pan on medium-low heat. Cook it about 3 to 4 minutes on each side until the cheese is melted well, and the bread is golden and crispy.
