BBQ Chicken Tacos (Print Version)

# Ingredients:

→ Chicken Preparation

01 - 6 chicken thighs, no skin or bones
02 - 1/2 tsp salt, kosher
03 - 1/2 tsp ground black pepper
04 - 1 tbsp olive oil (extra virgin)
05 - 1 cup diced white onions
06 - 2 tbsp minced garlic
07 - 1 cup chopped plum tomatoes
08 - 1 cup of chicken broth

→ Honey BBQ Sauce

09 - 2 tbsp butter, unsalted
10 - 1 cup finely chopped onions
11 - 1 tbsp garlic, minced
12 - 2 tbsp natural honey
13 - 2 tbsp Worcestershire
14 - 3/4 cup tomato ketchup
15 - 1 tsp soy sauce (light)
16 - 2 tbsp rice vinegar
17 - 1/2 tsp black pepper, ground

→ Strawberry Topping

18 - 1 1/2 cups strawberries, diced
19 - 1/4 cup cilantro, finely chopped
20 - 1/4 cup jalapeño, finely chopped with seeds removed
21 - 2 tbsp squeezed lime juice

→ Taco Assembly

22 - 8 small tortillas made with flour
23 - 1 fresh avocado, sliced

# Instructions:

01 - Sprinkle salt and pepper evenly over the chicken. Warm up your Dutch oven with some olive oil on medium heat. Sear the chicken on both sides until lightly golden, doing this in portions if needed. Toss in the onions, garlic, tomatoes, and stock. Let it cook covered for about 50 minutes on low heat until the chicken's tender.
02 - While waiting on the chicken, warm up a saucepan and melt the butter. Toss in the onions and garlic, cooking until fragrant. Mix in ketchup, honey, Worcestershire, soy sauce, rice vinegar, and pepper. Let it simmer without a lid for half an hour, giving it an occasional stir for a nice, thick sauce.
03 - Combine the strawberries, cilantro, jalapeño, and lime juice in a big mixing bowl. Stir gently and let it sit a bit to meld the flavors.
04 - Take the cooked chicken out and shred it with two forks. Drop the shredded pieces into the BBQ sauce and give it a thorough mix until it's all coated.
05 - Heat up the tortillas on both sides in a skillet until warm and slightly crispy. Layer the BBQ chicken in each tortilla, then pile on the salsa and a couple of avocado slices.
