Soft Baked Salmon Bites with Avocado (Print Version)

# Ingredients:

→ Meatballs Base

01 - 1 large egg, beaten until smooth
02 - ½ cup breadcrumbs, already seasoned
03 - 1 pound of fresh salmon, chopped finely

→ Meatballs Seasonings

04 - A sprinkle of freshly cracked black pepper and sea salt
05 - 2 tablespoons parsley leaves, freshly chopped
06 - ½ teaspoon paprika for some smoky flavor
07 - 1 teaspoon garlic powder
08 - 1 tablespoon olive oil to drizzle

→ Creamy Avocado Sauce

09 - 1 garlic clove, chopped into small bits
10 - ¼ cup of sour cream for creaminess
11 - A big ripe avocado
12 - 1 tablespoon of freshly squeezed lemon juice
13 - Salt and pepper—adjust it how you like

# Instructions:

01 - Start by heating your oven to 375°F (190°C). Set out a baking sheet and coat it lightly with olive oil or use a spray to keep things from sticking.
02 - In a big mixing bowl, toss your salmon together with the breadcrumbs, beaten egg, and all the seasonings like salt, pepper, garlic powder, paprika, and parsley. Mix it all up with your hands until it’s blended well and sticks together when pressed.
03 - Shape the mixture into small meatballs, about the size of a tablespoon each. Place them evenly across your prepped baking sheet so they cook evenly.
04 - Drizzle a little olive oil over the meatballs. Place them in the oven and bake for about 12 to 15 minutes. They should be firm and cooked through; aim for an internal temperature of 145°F (63°C) if you’ve got a meat thermometer handy.
05 - As the meatballs bake, put your avocado, sour cream, lemon juice, chopped garlic, salt, and pepper in a blender. Blend it all together until smooth and creamy. Taste and adjust the seasoning if you need to.
06 - Let the meatballs cool a little, then serve them with a good drizzle of your avocado sauce. If you want, sprinkle with parsley for a fresh touch and maybe add some lemon wedges for extra flavor.
