01 - 2 cups cooked shredded chicken
02 - 4 ounces cream cheese, softened

04 - 1/4 cup salsa, preferred heat level
05 - 1 teaspoon ground cumin
06 - 1 teaspoon chili powder
07 - Salt, to taste
08 - Freshly ground black pepper, to taste
09 - 1/4 cup chopped green onions or fresh cilantro (optional)

10 - 8 to 10 small flour or corn tortillas, 6-inch size
11 - Cooking spray or olive oil, for brushing

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper or lightly grease the surface.
02 - Heat tortillas in the microwave for 20 to 30 seconds until pliable to prevent cracking during rolling.
03 - In a mixing bowl, combine shredded chicken, softened cream cheese, shredded cheese, salsa, ground cumin, chili powder, salt, and black pepper. Mix thoroughly until a creamy consistency forms. Fold in green onions or cilantro, if desired.
04 - Lay a warm tortilla on a flat surface. Spoon 2 to 3 tablespoons of filling down the center. Roll the tortilla tightly around the filling and place seam-side down on the prepared baking sheet. Continue with remaining tortillas and filling.
05 - Lightly brush or spray the rolled taquitos with olive oil or cooking spray. Sprinkle extra shredded cheese on top if desired.
06 - Bake in the preheated oven for 15 to 20 minutes, turning taquitos halfway for even crispiness. Optionally, broil for 1 to 2 minutes at the end for a golden-brown finish, watching closely to prevent burning.
07 - Let taquitos cool for 2 to 3 minutes. Plate and serve with guacamole, sour cream, salsa, or pico de gallo. Garnish with lettuce, diced tomatoes, or extra cheese as preferred.
