Heat your oven to 425°F (220°C). Place a sheet of parchment paper on the baking pan.

Grab a bowl and toss in the chicken, softened cream cheese, cheddar, salsa, garlic powder, onion powder, cumin, plus a pinch of salt and pepper. Give it a good stir until it's blended.

Scoop around 2-3 tablespoons of the filling onto a tortilla, spreading it down the middle. Roll it up snug and lay it seam-side down on the lined pan.

Brush oil or spray lightly over the rolled taquitos. Pop them in the oven for 15-18 minutes until they're crunchy and golden.

Serve warm with sour cream, guac, or extra salsa on the side for dipping.
