Bacon Beef Loaf Dinner (Print View)

Moist beef loaf wrapped in bacon with a zesty-sweet topping, great alongside potato mash and steamed beans for a hearty meal.

# What You'll Need:

→ Meatloaf

01 - 1 cup full-fat milk
02 - 6 pieces white sandwich bread
03 - 2 pounds ground beef (80/20 mix)
04 - 1 cup Parmesan cheese, freshly shredded
05 - 1/4 teaspoon flavor salt
06 - 3/4 teaspoons regular salt
07 - Black pepper, freshly ground
08 - 1/3 cup fresh parsley, finely chopped
09 - 4 eggs, whisked
10 - 12 slices thin bacon

→ Sauce

11 - 1 1/2 cups tomato ketchup
12 - 1/3 cup dark brown sugar
13 - 1 teaspoon powdered mustard
14 - 1 dash hot pepper sauce

# Directions:

01 - Get your oven hot at 350°F (175°C).
02 - Dump bread into a big bowl and pour milk all over. Let it sit and get soggy for 5 minutes.
03 - Toss all other meatloaf stuff into the milk-soaked bread. Mix it up good with your hands until everything's blended, but don't squish the meat too much.
04 - Make a loaf about 5 inches (13 cm) wide with the meat mixture. Put it on a broiler pan so the fat can drip off. Wrap the bottom pan part with foil for easy cleanup later.
05 - Lay bacon strips across the top, tucking the ends underneath. Keep the strips next to each other but not on top of each other so you can cut between them when it's done.
06 - Mix all the sauce stuff in a bowl. Brush a third of it on top of your meat and bacon creation.
07 - Stick it in the middle of the oven and let it cook for 45 minutes.
08 - Pull it out and brush another third of sauce on top. Pop it back in for another 25 minutes.
09 - Take it out and let it chill for 10 minutes before cutting. Make sure it hits 160°F (71°C) inside with your meat thermometer.
10 - Cut it up and dish it out with the leftover sauce. Goes great with a side of mashed spuds and some roasted green beans.

01 - Don't rush into slicing too soon or all the juicy goodness will run out and leave your meatloaf dry.
