Bacon Collard Greens (Print Version)

# Ingredients:

01 - 4 chunks bacon, cut sideways into chunky half-inch bits
02 - 1 tiny yellow onion, diced
03 - 2 cloves garlic, finely chopped
04 - 1 teaspoon plain salt
05 - 1/2 teaspoon coarse ground black pepper
06 - 2 tablespoons white sugar
07 - A few splashes hot sauce
08 - 1/4 cup apple cider vinegar, add more if needed
09 - 2 pounds collard greens, tough stems taken off, cut into wide 3-inch strips (kale or chard work too)
10 - 1 cup chicken broth, or just water

# Instructions:

01 - Warm up a big skillet on medium flame. Fry bacon until edges just start turning brown, giving it a stir now and then. Toss in onion and cook till it gets soft and slightly golden.
02 - Throw in the garlic, salt, pepper, sugar, and some hot sauce. Let it cook until you can smell the garlic, about a minute or so.
03 - Pour in the apple cider vinegar and let it bubble. Cook until about half the liquid's gone, stirring and scraping those tasty brown bits from the pan bottom.
04 - Add your greens and the chicken broth (or water). Let it come back to a gentle bubble and turn heat to medium-low. Stir occasionally until the greens wilt and lose their bright color.
05 - Give it a taste and add more vinegar or hot sauce if needed. Serve it up with some of the yummy pan juices.

# Notes:

01 - The bacon shouldn't get too crispy - it should look a bit brown on the edges but still kinda raw in the middle parts.
