Bacon Egg Cheese Wrap (Print Version)

# Ingredients:

→ Base

01 - 4 big flour tortillas
02 - 6 jumbo eggs
03 - ¼ cup fresh milk
04 - 1 cup grated cheese (sharp, mild, or combined)
05 - 8 pieces of bacon
06 - 1 tablespoon fat or cooking oil
07 - ½ teaspoon table salt
08 - ¼ teaspoon ground pepper

→ Optional Toppings

09 - 1 ripe avocado, cut into pieces
10 - ½ cup chopped tomatoes
11 - Spicy sauce as needed

# Instructions:

01 - Warm up your skillet on medium flame. Fry the bacon until it's nice and crunchy, turning once in a while. Put the cooked strips on a paper towel to soak up the extra fat.
02 - Mix the eggs, milk, salt, and pepper in a bowl. Put your non-stick pan on low heat with some butter or oil, then pour in your egg mix. Move it around with your spatula, cooking it slowly so it stays soft and puffy.
03 - Put tortillas on a flat surface. Spread about ¼ cup cheese in the middle of each one. Add a quarter of your cooked eggs and 2 crispy bacon strips. Throw on some avocado or tomato if you want.
04 - Bring in the tortilla edges over your fillings, then roll it up from the bottom, making sure everything stays inside.
05 - If you want more taste and crunch, put your wrap with the seam facing down in a hot skillet. Let it cook for 1-2 minutes per side until it looks golden and the cheese gets all melty.

01 - Beat the milk into the eggs really well before cooking if you want them extra fluffy.
02 - You can make these ahead and keep them cool for 2 days or stick them in the freezer for quick morning meals.
