Sizzle the bacon in a hot pan until it’s crispy or as soft as you like it. Take it out, then chop it into small pieces.

Pop a non-stick pan on medium-low heat. Toss in a small amount of butter, stir it around until the bottom is coated.

Crack the eggs and give them a good whisk until they’re blended (don’t make them too bubbly). Add a pinch of salt and some pepper.

Pour your egg mix into the heated pan. As the edges set, gently lift them with a rubber spatula. Let it cook just how you like it.

Place the bacon chunks and Brie over half the omelette. Fold the other side over the filling. Slide it onto a plate carefully and enjoy it right away.
