Crisp apples, cranberries, carrots, and walnuts tossed in lemon for a fresh, tangy, and vibrant dish.

# What You'll Need:

→ Produce

01 - 2 cups diced fresh apples (approximately 2 medium Granny Smith or Honeycrisp)
02 - 1 cup shredded carrots (about 2 medium carrots, peeled and shredded)
03 - 1 cup dried cranberries, unsweetened or lightly sweetened

→ Nuts

04 - 1/2 cup chopped walnuts

→ Dressing

05 - 2 tablespoons freshly squeezed lemon juice
06 - Salt, to taste
07 - Ground black pepper, to taste

# Directions:

01 - Thoroughly wash apples and carrots. Core and dice apples into bite-sized pieces. If using whole carrots, peel and shred them using a box grater or food processor.
02 - Place diced apples, shredded carrots, dried cranberries, and chopped walnuts in a large mixing bowl. Toss gently to distribute ingredients evenly.
03 - In a separate small bowl, whisk together freshly squeezed lemon juice with salt and ground black pepper. Adjust seasoning to preference.
04 - Pour dressing over apple, carrot, cranberry, and walnut mixture. Toss until all components are evenly coated.
05 - Refrigerate covered for 10 to 15 minutes to allow flavors to meld before serving.

# Notes:

01 - For a touch of sweetness, consider adding a teaspoon of honey to the dressing. Apples can be substituted with pears for variation.
