Combine the flour, warm milk, egg, softened butter, instant yeast, granulated sugar, vanilla sugar, and salt in a large mixing bowl. Knead until a smooth and elastic dough is achieved. Cover the bowl with a clean towel and allow the dough to rise in a warm place for approximately 1 hour, or until doubled in size.

While the dough rises, melt the butter in a skillet over medium heat. Add the diced apples, sugar, and ground cinnamon. Sauté until apples soften and release their juices, stirring as needed. Once risen, divide the dough into 9 equal pieces. Shape each piece into a smooth ball and set on a parchment-lined baking sheet. Cover loosely and allow to rise for 15 minutes.

Combine softened butter, granulated sugar, and flour in a small bowl. Rub with fingertips until the mixture forms coarse crumbs.

Press the center of each dough ball with the bottom of a glass to create a well, leaving a substantial border. Brush the edges of the dough with beaten egg yolk for shine.

Spoon cheesecake filling into each well, followed by a spoonful of the cooled apple filling. Sprinkle each bun generously with the crumble topping.
