03 - 1 large egg
04 - 4 1/2 tablespoons unsalted butter, softened
05 - 2 1/4 teaspoons instant yeast
06 - 3 tablespoons granulated sugar
07 - 1 tablespoon vanilla sugar
08 - 1 pinch salt

→ Apple Filling

09 - 2 medium apples, peeled and diced
10 - 2 tablespoons brown sugar or granulated sugar
11 - 1 teaspoon ground cinnamon
12 - 1 teaspoon cornstarch
13 - 1/2 cup water
14 - 1 tablespoon unsalted butter

→ Cheesecake Filling

15 - 7 ounces cream cheese, softened
16 - 2 tablespoons granulated sugar
17 - 1 tablespoon vanilla sugar

→ Crumble Topping

18 - 1 tablespoon unsalted butter, softened
19 - 1 tablespoon granulated sugar
20 - 1/2 cup all-purpose flour

→ For Assembly

21 - 1 large egg yolk

→ Glaze

22 - 1 cup powdered sugar
23 - 2 tablespoons whole milk

# Directions:

01 - Combine the flour, warm milk, egg, softened butter, instant yeast, granulated sugar, vanilla sugar, and salt in a large mixing bowl. Knead until a smooth and elastic dough is achieved. Cover the bowl with a clean towel and allow the dough to rise in a warm place for approximately 1 hour, or until doubled in size.
02 - While the dough rises, melt the butter in a skillet over medium heat. Add the diced apples, sugar, and ground cinnamon. Sauté until apples soften and release their juices, stirring as needed. In a small bowl, dissolve the cornstarch in water, then pour into the skillet. Cook for an additional 2 minutes, stirring constantly, until the mixture is thickened. Remove from heat and let cool completely.
03 - In a medium bowl, beat together cream cheese, granulated sugar, and vanilla sugar until smooth and creamy. Set aside.
04 - Once risen, divide the dough into 9 equal pieces. Shape each piece into a smooth ball and set on a parchment-lined baking sheet. Cover loosely and allow to rise for 15 minutes.
05 - Combine softened butter, granulated sugar, and flour in a small bowl. Rub with fingertips until the mixture forms coarse crumbs.
06 - Press the center of each dough ball with the bottom of a glass to create a well, leaving a substantial border. Brush the edges of the dough with beaten egg yolk for shine.
07 - Spoon cheesecake filling into each well, followed by a spoonful of the cooled apple filling. Sprinkle each bun generously with the crumble topping.
08 - Bake in a preheated oven at 350°F (180°C) for 20 to 25 minutes until the buns are golden brown and the crumble is set. Remove from the oven and allow to cool on a rack.
09 - In a small bowl, whisk together powdered sugar and milk until a smooth, pourable glaze forms. Drizzle glaze over the cooled buns and let set before serving.

# Notes:

01 - For optimal texture, allow dough balls sufficient time for the final rise. Apple filling should be cooled completely before assembly to prevent excess moisture.
