Set your oven to 220°C (425°F) and let it warm up.

Mix the apple slices with some butter and maple syrup in a baking dish. Roast them for about 25 minutes, until they're soft and golden.

Lay the puff pastry on a parchment-lined baking tray. Put the brie in the middle, and cut off a little of the top rind, leaving the base and sides untouched. Spread fig preserves or apple butter on top.

Bring the pastry corners over the brie to wrap it up. Brush the outside with egg wash and sprinkle on some coarse sugar.

Pop it in the oven for 20-25 minutes, until the pastry has a beautifully golden color.

Add the roasted apples on top of the cooked brie. Give it a touch of thyme, and serve with crackers or just dig in as is.
