01 - 3 smaller zucchini or 2 bigger ones, sliced into sticks
02 - 1/2 cup all-purpose flour

→ Coating Mixture

03 - 2 tablespoons of Italian seasoning
04 - 1/2 teaspoon of salt
05 - 1 teaspoon of garlic powder
06 - 1/2 cup of shredded parmesan
07 - 1 cup of panko breadcrumbs

→ Egg Wash

08 - 2 large eggs
09 - 1 tablespoon of cold water

10 - Spray olive oil

# Directions:

01 - Chop the zucchini into strips. Toss them in a bag with flour to coat evenly all around.
02 - Use a medium-sized bowl to mix together the panko, parmesan, Italian spices, garlic powder, and salt.
03 - In a smaller bowl, beat the eggs and mix in the water until smooth.
04 - Start with the flour-dusted zucchini sticks. Dip them into the egg wash first, then roll them in the panko mixture until well-coated.
05 - Spray the air fryer basket lightly with olive oil. Lay the zucchini sticks in a single layer, spritz them with oil, and air fry at 350°F. Cook for about 7 to 12 minutes until they turn golden and crispy.
