Remove the top and bottom of the pineapple, then stand it upright. Slice away the skin in strips and remove the eyes with a paring knife. Cut the pineapple into 1-inch chunks.

In a mixing bowl, combine pineapple chunks with olive oil or coconut oil, ground cinnamon, honey or maple syrup, and pinch of salt. Toss gently until pieces are coated evenly.

Set air fryer to 400°F and preheat for 2 minutes.

Arrange pineapple chunks in a single layer inside the air fryer basket. Cook for 8 to 10 minutes, shaking or stirring halfway through to ensure even browning. Pineapple should develop golden brown edges and remain juicy at the center.

Carefully transfer the pineapple to a serving platter. Serve warm as is, or pair with vanilla ice cream if desired.
