Crispy Air Fryer Cauliflower (Print Version)

# Ingredients:

→ For the Blue Cheese Dip

01 - 1/4 cup of mayonnaise
02 - 1/4 cup of Greek yogurt, plain
03 - 1/4 cup of blue cheese, crumbled
04 - A tiny dash of hot sauce, pick your favorite
05 - A sprinkle of freshly cracked black pepper

→ For the Crispy Cauliflower

06 - A large, fresh cauliflower head
07 - 1/4 cup of water
08 - 1 teaspoon of coarse kosher salt
09 - 1 cup of plain breadcrumbs
10 - Two big eggs
11 - 1/2 teaspoon of garlic powder
12 - A small pinch of chili powder, about 1/2 teaspoon
13 - Nonstick spray for your air fryer

# Instructions:

01 - Stir together the mayo, Greek yogurt, crumbled blue cheese, some black pepper, and hot sauce in a bowl until smooth and combined. Stick the mix in the fridge to chill while you work on the cauliflower.
02 - Cut the cauliflower into small chunks, aiming for bite-size pieces that aren’t bigger than 1 1/2 inches. This keeps them easy to cook and great for dipping!
03 - Sprinkle the florets with the chili powder, garlic powder, and salt in a bowl. In a separate bowl, whisk the eggs and water together. Pour the egg mixture onto your cauliflower and toss it all so each piece is covered. Then, mix in the breadcrumbs and toss again till they stick nicely.
04 - Spray the air fryer basket with nonstick spray, then spread the florets in a single layer. Leave some room between them! Cook them at 350°F for 7 minutes, flip them, and then cook for 7 more minutes until crispy and golden. You might need multiple rounds to finish them all.
05 - These taste best fresh from the air fryer while still crunchy! Serve them up with that chilled dip on the side for dunking.

# Notes:

01 - No air fryer? Use a regular oven! Lay the cauliflower on a baking tray and roast at 350°F for 20-30 minutes, flipping halfway.
02 - Don’t overcrowd when cooking. Keeping some space helps them come out extra crisp.
03 - They’re best when eaten straight away, so grab them while they’re still warm and crunchy!
